We have some very exciting news for our loyal customers and fellow egg lovers!


If you’ve visited our farm or chatted with us at the markets lately, you might know that we have a new flock of young hens just starting their laying journey out on the pasture.


This means something special is happening in the nesting boxes. We are thrilled to announce that we have now added trays of gorgeous pasture-raised pullet eggs to our range.


Starting this weekend, you can grab a tray of these seasonal treats at our stall at the Peel Produce Markets in Dawesville.


But you might be asking... what exactly is a pullet egg, and why should you try them?


What is a Pullet Egg?

A "pullet" is simply a young hen, usually under a year old. When she first begins to lay, her eggs are noticeably smaller than the standard large eggs you are used to.

Because the hens are still growing themselves, these initial eggs are petite, often with slightly pointier shells. They are a fleeting, seasonal offering—as the hens mature over the next month or two, their eggs will grow to standard size, and the "pullet phase" will end until our next flock matures.


Why Chefs Love Them (The Benefits)

Don't let their size fool you. In the culinary world, pullet eggs are often considered a "chef's secret" ingredient. Here is why they are exceptionally delicious:

  • Richer Flavour: Pullet eggs are renowned for having creamier, richer, and more vibrantly coloured yolks.

  • The Yolk-to-White Ratio: Because the egg is smaller, you get a higher ratio of that delicious, nutrient-dense yolk compared to the white. They pack a massive flavour punch in a small package.

  • Firm Whites: The whites of pullet eggs tend to be tighter and firmer, holding their shape brilliantly when cooked.


And, of course, because they come from our pasture-raised hens, they have all the ethical and nutritional benefits you’ve come to expect from our farm.


How to Use Pullet Eggs in Your Kitchen

Because of their unique structure and intense flavour, pullet eggs shine in specific dishes:


1. The Perfect Poach Because their whites are so firm and tight, pullet eggs are arguably the easiest eggs to poach. They hold together beautifully in the water, creating a neat, restaurant-quality globe of deliciousness.


2. Richer Baking If a recipe calls for "3 large eggs," try substituting 4 or 5 pullet eggs. The higher yolk content adds incredible richness and moisture to cakes, brownies, and custards.


3. Gourmet Garnishes Their petite size makes them incredibly visually appealing. Soft-boil them, slice them in half, and use them to top ramen, hearty salads, or asparagus dishes. They look delicate but taste robust.


4. Mini Appetisers They make the most adorable (and tastiest) mini deviled eggs or pickled eggs for a grazing platter.
